Xavier Monclús chose for the tasting what he considers to be the five best champagnes in the world, which accompanied some dishes masterfully prepared by Yayo Daporta with the raw material from Real Conservera Española. It started with a cauliflower mousse, coffee and cockle vinaigrette, paired with Dom Ruinart, a fresh blanc de blancs, which does not hold in the mouth, with notes of lichens.
The event held at the Novavila wine tourism hotel was, according to José Luis Vilanova, “a way to enhance our companies.
