Tasting pairing with the best champagne in the world

The Real Conservera products are selected for a tasting with the best champagne in the world. The Novavila from Meis hotel hosted a tasting pairing between LVMH and Real Conservera Española, cooked by Yayo Daporta

The more than forty people participating in the dinner enjoy an authentic master class about the champagne given by Xavier Monclús, Wine Education Manager at Louis Vuitton Moët Hennessy, in a fun and casual style. He explained why this sparkling wine is the most difficult wine to make in the world, in which up to five different vintages are mixed to produce a bottle -and no less than 800 wines in the case of an imperial brut-; It comes from the northernmost wine region of the planet, at parallel 49 North, the limit of vineyard cultivation. He showed how to open a bottle of champagne with only two hands, always with the label up, without removing the wire and turning the base (allows the largest lever, so that the stopper comes out “like a woman’s sigh, no like an army of halberdiers attacking »

Yayo daporta prepares some dishes in a masterful way, made with products from Real Conservera Española, to accompany the five-best champagne in the world.

Xavier Monclús chose for the tasting what he considers to be the five best champagnes in the world, which accompanied some dishes masterfully prepared by Yayo Daporta with the raw material from Real Conservera Española. It started with a cauliflower mousse, coffee and cockle vinaigrette, paired with Dom Ruinart, a fresh blanc de blancs, which does not hold in the mouth, with notes of lichens.

The event held at the Novavila wine tourism hotel was, according to José Luis Vilanova, “a way to enhance our companies. We think it would be positive to associate a group like LVMH, the world’s largest luxury conglomerate, with wonderful preserves and with the tradition and creativity of a company like Sargadelos ”. The Galician ceramics firm presented a new tableware for high restoration that will be marketed through Vilanova Peña. This company based in Ribadumia has been dedicated to creating home and quality of life for more than 30 years. “It is about doing things well and offering experiences that spread the image of this unique area, the Rías Baixas, and Galicia”, summarizes Vilanova.
