He explained why this sparkling wine is the most difficult wine to make in the world, in which up to five different vintages are mixed to produce a bottle -and no less than 800 wines in the case of an imperial brut-; It comes from the northernmost wine region of the planet, at parallel 49 North, the limit of vineyard cultivation. It started with a cauliflower mousse, coffee and cockle vinaigrette, paired with Dom Ruinart, a fresh blanc de blancs, which does not hold in the mouth, with notes of lichens.<\/p>\n<p>The event held at the Novavila wine tourism hotel was, according to Jose\u0301 Luis Vilanova, \u201ca way to enhance our companies.
