These cockles come from the Noia estuary, located in northern A Coru\u00f1a, part of the Noia Fishermen’s Guild. These cockles go through a rigorous and careful cleaning process. First, the cockles are purified in special ocean water tanks for 16 hours in a seafood purification plant. Next, they are transported to our cannery where they are deshelled and rid of any leftover sand from the purification process. Lastly, they are canned and preserved in brine made from natural ingredients, lemon, salt, onion, bay leaf and water. All of our gourmet canned seafood is hand-packed, allowing us to place each piece perfectly and deliver products with presentation that is unmatched.<\/p>\n
Once sealed, the Cockles in Brine have a shelf life of 4 years. Store in a cool, dry place at room temperature.<\/p>\n
We recommend tasting as an appetizer, side dish or even as an ingredient for a main dish. The brine is often used by chefs due to its unique concentrated flavor. We highly suggest saving it for your own recipes. If presented as an appetizer, they are best served in the can. The ideal wine pairings are, without a doubt, Albari\u00f1o, Ribeiro or Godello wines as they also come from the same area.<\/p>\n
