Le thon blanc, apr\u00e8s avoir \u00e9t\u00e9 s\u00e9lectionn\u00e9 sur le march\u00e9 du poisson, est transf\u00e9r\u00e9 \u00e0 l&rsquo;usine pour \u00eatre imm\u00e9diatement trait\u00e9 \u00e0 l&rsquo;\u00e9tat frais, sans subir de processus de cong\u00e9lation pour extraire la poitrine fra\u00eeche, en la nettoyant soigneusement et en la conditionnant \u00e0 la main dans la bo\u00eete en morceaux entiers, sans filets, pour pr\u00e9server sa texture et \u00e9viter l&rsquo;oxydation de la graisse entre ses tranches, ce qui lui conf\u00e8re sa saveur exceptionnelle.
