Ingredients

The first thing you must do is gather all the ingredients necessary for this delicious recipe. Take note!

  • 1 Onion
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 2 Garlic Cloves
  • 1 Tomato
  • 4 Tablespoons of Tomato Sauce
  • 2 Cans of Scallops
  • Sweet Paprika
  • Ground Pepper
  • Saffron
  • Salt
  • Extra Virgin Olive Oil
  • Empanadilla Dough

Steps to follow

First, gather all the ingredients Heat a pan with 4 tablespoons of olive oil. Meanwhile, chop the onion in small pieces. Once heated, place the chopped onion in the pan and sauté until soft. Then, chop the bell peppers and garlic cloves, peel the tomato and cut into small cubes. Once the onion is sauteed, add the peppers and tomato and cook for 8-9 minutes at low heat.

Afterwards, add the scallops, saffron, paprika, tomato sauce, salt and pepper. Then, mix together and cook at low heat for 5 minutes. Once cooked, let the mixture cool.

Later, add the filling mixture to the empanadilla dough and fry in a pan with olive oil. After frying the empanadillas, set them on a plate with some paper towels to soak the excess oil. Once dry, serve the empanadillas and enjoy!

If you don’t want to use so much oil, another option is to bake them in the oven. An alternative with less oil but same great taste.

Alternative empanadillas

This scallop empanadillas recipe is great. But we know that some people prefer other options. So we’d like to show you some other options for empanadillas with our canned seafood. We promise they’ll be just as delicious!

  • Cockle Empanadillas: Follow the same steps but replace the scallops with cockles. We recommend switching the saffron for some parsley. They will be delicious!
  • Yellowfin Tuna Empanadillas: In this recipe, we recommend not using saffron and adding some cheese to the filling. These empanadillas are even better when baked in the oven.
  • Albacore Belly Meat Empanadillas: Just like the Yellowfin Tuna Empanadillas, we recommend not using saffron. If you add a little extra tomato sauce they will be juicier.
