- 1 Red Bell Pepper
- 1 Green Bell Pepper
- 2 Garlic Cloves
- 1 Tomato
- 4 Tablespoons of Tomato Sauce
- 2 Cans of Scallops
- Sweet Paprika
- Ground Pepper
- Saffron
- Salt
- Extra Virgin Olive Oil
- Empanadilla Dough
Steps to follow
First, gather all the ingredients Heat a pan with 4 tablespoons of olive oil. Meanwhile, chop the onion in small pieces. Once heated, place the chopped onion in the pan and sauté until soft. Then, chop the bell peppers and garlic cloves, peel the tomato and cut into small cubes. Once the onion is sauteed, add the peppers and tomato and cook for 8-9 minutes at low heat.
Afterwards, add the scallops, saffron, paprika, tomato sauce, salt and pepper. Then, mix together and cook at low heat for 5 minutes. Once cooked, let the mixture cool.
Later, add the filling mixture to the empanadilla dough and fry in a pan with olive oil. After frying the empanadillas, set them on a plate with some paper towels to soak the excess oil. Once dry, serve the empanadillas and enjoy!
