Real Conservera Sardines come exclusively from the Galician estuaries (“bajura” fishing). All of them are Sardina pilchardus, captured in the Atlantic Ocean during campaign, when they have the perfect balance of fat content, at the perfect time of day and always using sustainable and traditional fishing methods.

Preparation of canned sardines in olive oil

The Real Conservera Sardine cleaning process is very thorough. First, they are manually eviscerated, removing the head, tail and guts with great care as not to damage the fish itself. Next, they are washed in brine and toasted one by one, as was traditionally done in Galicia long ago. Then, they are packed by hand according to size.

These products have a shelf life of 6 years. Store in a cool, dry place at room temperature.
We recommend tasting directly from the can or by preparing a canapé using some toasted bread with tomato cream or salted butter with some thin onion slices. For pairing, we suggest white, rosato or red wine
