The Sea Urchins used all come from Aguiño, in the northern part of the Noia estuary. During the production process we follow a very labor intensive and careful process; the gonads are extracted by hand from the Sea Urchins from the Galician estuaries. Then, they are cleaned with sea water and hand-packed. This process always takes place during campaign season to ensure the highest quality. Also, we only purchase the best quality Sea Urchin in the Galician estuaries.
Once canned, the Sea Urchin Roe in Brine must be stored in a dry place at room temperature. This will help the Sea Urchin Roe maintain its taste and texture for 4 years.
